Choucroute Garnie Simple Recipe Ingredients: 3 pounds sauerkraut 1/2 pound chunk bacon 2 tablespoons butter 1/2 cup carrots, thinly sliced 1 cup onions, thinly sliced parsley sprigs 1 bay leaf 6 peppercorns 10 juniper berries (or 1/4 cup gin) 1 1/2 cups beef bouillon 3/4 cup water 1 cup dry white wine salt 1 2 to 3 pound smoked pork butt 1 kielbasa 4 knockwurst 3 smoked bratwurst 3 unsmoked veal sausages Instructions: Drain the sauerkraut. Place in a large bowl and cover with cold water. Soak for 20 minutes, changing the water twice. Drain again. Then take up large handfuls and squeeze out as much water as possible. Set aside. Remove the rind from the bacon and cut into strips about two inches long and one half inch wide. Blanch bacon by placing in a saucepan and covering with two quarts of cold water. SHEPARD'S PIE ============= Ingredients: ------------ 1 lb of cooked meat - leftover roast (beef/pork/turkey) or browned ground (beef/turkey) 1 cup cooked carrots (or peas/corn/etc.) 1/2 cup chopped or pearl onions 2 cloves garlic minced 1 cup gravy/broth/au jus 1/2 tsp black pepper 1 tsp salt (optional) Instructions: ------------- Add everything together in a 9" pie shell and cover with mashed potatoes. Bake at 350 until the potatoes are well browned. I've made a vegetarian version with just mushrooms, onions, broccoli and carrots. I usually use the Knorr Pepper Sauce mix for the gravy. Hamburger & Zucchini Casserole Ingredients: 2 c. zucchini, grated (uncooked) 1/4 teaspoon basil 1 c. onion, chopped 2 c. cottage cheese 1 c. cheddar cheese, grated 1 pound hamburger 1 c. instant rice, cooked Salt and pepper Cooking Instruction: Preheat oven to 350 degrees. In a large skillet, brown hamburger and onions. Add rice, basil, salt, and pepper. Place half of the zucchini in the bottom of a greased casserole dish. Cover with hamburger mixture. Spread cottage cheese over hamburger and add another layer of zucchini. Sprinkle cheddar cheese on top. Bake for about 35 minutes. by Rachel Paxton

INGREDIENTS 3 lb meaty cross-cut beef shank bones, cut into 3-inch pieces 10 cups water 3 tablespoons beef-flavor instant bouillon 1½ teaspoons salt ½ teaspoon pepper ½ teaspoon dried thyme leaves 2 dried bay leaves 4 cups vegetable juice 3 cups cubed potatoes (3 medium) 3 cups coarsely chopped cabbage 2 cups frozen small whole onions (from 16-oz bag) 2 cups cubed peeled rutabaga (1½ medium) 2 cups Green Giant® frozen cut green beans (from 1-lb bag) 4 medium carrots, sliced (2 cups) 3 medium stalks celery, sliced (1½ cups)

INGREDIENTS Beef : 1/2 lb Firm tofu : 1/2 block (about 10 oz) Flour : 1/2 cup Garlic : 4 cloves Green onion : 2 stalks Sesame oil : 1 ts Soy sauce : 1 tb Vinegar : 1 ts Salad oil Pepper Salt Egg, beaten : 5 METHOD Squeeze the firm tofu with paper towel or gauze. Mash it finely. Grin the beef. Chop the garlic and the green onion finely. Put the beef, tofu, garlic, green onion, sesame oil, pepper, and salt in a large bowl; mix them well by hand. Shape the mixture into 1 1/3 inch round patties. Heat the salad oil in a skillet. Dredge the patties in the flour, dip them in the beaten eggs, and fry them until browned on both sides. When they are warm, serve them with a seasoning dip - the mixture of 1 tablespoon soy sauce and 1 teaspoon vinegar. ( Source )
