Avocado 'N Everything Pizza

Avocado 'N Everything Pizza Ingredients: 2 cups buttermilk baking mix 1/2 cup hot water 1 can (8 ounces) tomato sauce 1/4 cup chopped green onion 1/2 cup shredded mozzarella cheese 1/2 cup sliced muchrooms 1/3 cup sliced ripe olives 1 small tomato, sliced 2 tablespoons olive oil 1 avocado, seeded, peeled and sliced Fresh basil leaves, optional Instructions: Heat oven to 425F. Stir together buttermilk mix and water with fork in small bowl. Pat or roll into 12-inch circle on ungreased baking sheet or pizza pan. Mix together tomato sauce and green onion; spread over pizza dough. Top with cheese, mushrooms, olives and tomato slices. Drizzle olive oil over top. Bake 15 to 20 minutes or until edge of crust is golden brown. Remove pizza from oven and arrange avocado slices over top. Garnish with basil leaves and serve.

Zucchini Pizza

Zucchini Pizza Ingredients: 4 c. zucchini, grated and drained 2 c. rice, cooked 1 1/2 c. mozzarella cheese, grated 1 1/2 c. Parmesan cheese, grated 2 eggs 1 pound hamburger 1 medium onion, chopped 2 cloves garlic, chopped 1 (15 1/2-oz.) jar spaghetti sauce Cooking Instruction: Preheat oven to 400 degrees. In a large bowl, combine zucchini, rice, 1/2 of the cheeses, and the eggs. Press the zucchini mixture into the bottom of a greased 13x9x2-inch baking dish. Bake until mixture is lightly browned (about 15 minutes). In a large skillet, brown hamburger. Add onion and garlic and cook until tender. Drain fat and stir in spaghetti sauce. Spread hamburger mixture over zucchini mixture and sprinkle remaining cheese on top. Bake until cheese melts (about 15 minutes). by Rachel Paxton

Grilled Pizza Bread

INGREDIENTS 1 pound ground beef 1/2 cup chopped onion 1 can (8 ounces) tomato sauce 1/2 teaspoon salt 1/2 teaspoon dried oregano 1 loaf (1 pound) French bread 1 cup (4 ounces) shredded mozzarella cheese 1 can (2 1/4 ounces) sliced ripe olives, drained Sliced pepperoni (optional) METHOD In a skillet over medium heat, cook the beef and onion until meat is no longer pink and onion is tender; drain. Stir in the tomato sauce, salt, and oregano; simmer for 5 to 10 minutes. Cut bread in half lengthwise and then widthwise. Spread meat mixture on cut side of bread; sprinkle with cheese, olives, and pepperoni if desired. Loosely wrap bread individually in pieces of heavy-duty foil (about 24 x 18 inches); seal. Grill covered, over medium heat for 15 to 20 minutes or until heated through. Serves: 4-6
