ZUCCHINI BREAD RECIPE

ZUCCHINI BREAD Source: Family Circle, June 1991 Ingredients: 2 c. all-purpose flour 1.5 tsp. salt 3 tsp. cinnamon 1 tsp. baking soda 1/2 tsp. baking powder 1 c. oil 3 eggs 1 tsp. vanilla 1-1/2 c. sugar 3 c. shredded zucchini 1/2 c. chopped walnuts 1/2 c. raisins Instructions Preheat oven to 350F. Grease two small loaf pans. Sift together flour, salt, cinnamon, baking soda, baking powder. In a large bowl whisk together oil, eggs, vanilla, sugar. Stir in flour mixture and remaining ingredients. Divide into prepared pans. Bake for 55-60 minutes or until cake tester comes out clean. Cool on wire racks to room temperature. From: darsie@ece.ucdavis.edu (Richard Darsie)

SHEPARD'S PIE

SHEPARD'S PIE ============= Ingredients: ------------ 1 lb of cooked meat - leftover roast (beef/pork/turkey) or browned ground (beef/turkey) 1 cup cooked carrots (or peas/corn/etc.) 1/2 cup chopped or pearl onions 2 cloves garlic minced 1 cup gravy/broth/au jus 1/2 tsp black pepper 1 tsp salt (optional) Instructions: ------------- Add everything together in a 9" pie shell and cover with mashed potatoes. Bake at 350 until the potatoes are well browned. I've made a vegetarian version with just mushrooms, onions, broccoli and carrots. I usually use the Knorr Pepper Sauce mix for the gravy. Zucchini Cheddar Bread

Zucchini Cheddar Bread Ingredients: 1 c. chopped onions 1/4 c. butter 2 1/2 c. Bisquick 1 tbsp. fresh parsley, chopped 1/2 tsp. thyme 3 eggs 1/2 tsp. basil 1/4 c. milk 1 c. grated cheese 1 1/2 c. to 2 c. shredded zucchini Cooking Instruction: Saute onions in butter. Cool a little and then add remaining ingredients. Pour into an 8x8-in. baking pan and bake at 400 degrees for 40 minutes. by Rachel Paxton

Zucchini Pancakes

Zucchini Pancakes Ingredients: 3 c. zucchini, grated 2 eggs 3 tbsp. flour 1/4 c. Parmesan cheese 1/2 teaspoon salt Pepper Butter Cooking Instruction: In a medium-sized bowl, mix together zucchini and salt. Let stand about 45 minutes. Squeeze excess moisture from zucchini. In another bowl, beat eggs well. Add zucchini, flour, cheese, and pepper; mix well. In a large skillet, melt some butter. Fry tbsp.fuls of the zucchini mixture until lightly browned, turning once.
